Use your leftover sweet potatoes for this recipe!So, how was your Thanksgiving? Are you recovering from the cooking and feasting? And do you know yet what you’re doing with all those leftovers? Mmm, turkey sandwiches! And what else? Hello turkey sweet potato shepherd’s pie! Oh yeah, use up three different Thanksgiving dishes in one scrumptious casserole: roasted turkey, mashed sweet potatoes, and gravy.

   

Rachael Ray’s recipe has you cooking more sweet potatoes from scratch, but if you already have some leftover sweet potatoes, here’s an adaptation of that recipe. I mean, didn’t you do enough cooking YESTERDAY??? Okay, let’s go for something that tastes just like Thanksgiving dinner only much, much easier!

   

Turkey Sweet Potato Shepherd’s Pie, adapted from Rachael Ray’s recipe on Food Network

   
   
Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 pounds chopped leftover turkey
  • Salt and freshly ground black pepper
  • 1 onion, cut into 1-inch dice
  • 2 carrots, peeled and grated
  • 4 ribs celery, chopped
  • 1 1/2 cups gravy
  • 1 (10-ounce) package frozen peas or 1 cup leftover peas
  • 2 cups sweet potatoes
  • 2 tablespoons butter
  • 2 cups sharp shredded yellow Cheddar

   

Directions:

  1. Preheat oven to 425 degrees F.
  2. In a deep skillet or a Dutch oven, heat 2 tablespoons oil over high heat. Add meat and break up with a wooden spoon; season with salt and pepper. Add onions, carrots, and celery into the turkey. Stir and cook for 5 minutes. Stir gravy and peas into meat and turn heat off.
  3. If your leftover sweet potatoes are not already mashed, mash them now with 2 tablespoons of butter. Top the meat with the potatoes. Cover potatoes with cheese and place in the oven to melt cheese and warm potatoes, about 15 minutes.

There’s just no other way to put it: people are motherfucking crazy.

 

Pepper spraying a crowd to get to a deal on an Xbox? Causing a riot to grab a $2 waffle maker? (I mean waffles are pretty awesome, but seriously?) Interestingly enough both of these incidents happened at Walmart, even though I’m sure other retailers saw their own special brand of madness erupting.

 

I’ve never actually been to a Walmart. My only exposure has been through the this website. They actually just opened a Super Walmart in my town last month. Since I didn’t get there before Thanksgiving, just to look around, I don’t plan on going anywhere near that place until maybe, oh I don’t know – March?

 

Aside from the ridiculousness of the violence what does it say about us that the day after we’re being thankful of all the things we already have, that we go out, buy more shit and treat each other worse than the lions did the Christians in the Coliseum?! All (supposedly) in the name of The Holiday Spirit, Peace and Love, and Goodwill Towards All. It’s kinda sad, pathetic and really, really scary.

 

Everybody likes a good deal, and Black Friday ones can be exceptional. But is it really worth it to be stomped on, run over, pushed, mangled and pepper sprayed, bitch-slapped and possibly arrested? I don’t think so.

   

Personally Black Friday involves a bunch a things I hate – crowds, waiting in line, fresh air & having to put on underwear (scratch the underwear part if I ever get to the Walmart, I hear it’s not a requirement there).

   

Look, I’m pretty sure most of the retailers have the same damn deals online. Probably with free shipping! So just stay the fuck home, have a turkey sandwich and get to clicking.

 


 

   

   

 

Filthy Little Buggers November 25, 2011

 

You know how you can listen to a song for years – love it, sing it out loud (privately, when no one else is around because your singing really kinda sucks) and then one day something in this oh-so-familiar piece of music just hits you in a different way and then you realize – “Wait – what was that?”

 

Yeah – that just happened.

 

So I’m listening to “Penny Lane” by The Beatles and the line “a four of fish and finger pies” came up.

 


OMG! – those cheeky bastards”

 

 

I’m shocked, just shocked. Firstly at the sneaky, filthy reference and secondly that I, as a woman with a decidedly one-track mind (that track leading straight to the gutter, of course) never even picked up on it until now.

Would you rather go bungee jumping or skydiving? November 22, 2011

While both of these ideas thrill and terrify me, I would have to go with skydiving.

 

If I’m going to die vomiting at least the skydiving is a one-way trip. With a bungee jump, even if the cord/rope/rubber band doesn’t snap I’d be purging on the way down and the bounce back up.

 

I do have a tendency to like to be attached to something, but there’s something so scary/liberating about free falling/floating with no grounding beneath or around you.
